Set sail for südback

Over 700 exhibitors will present their products and services to around 38,000 visitors in six exhibition halls at südback 2019!

With südback 2019, held over 21st - 24th September, Messe Stuttgart underlines its claim, as the only trade fair company in Germany focussing on the trade, to cover the entire industry. Since the first südback in 1978 the trade fair organisation has acquired industry expertise over the decades.

At an international press talk in Vienna, the President/CEO of Messe Stuttgart Ulrich Kromer von Baerle stated that their “main concern is the trade.” Whether it is working and operating technology, shop fixtures and fittings, raw materials, merchandise or sales promotion – all products and services showcased at südback 2019 are adapted to the needs of artisan bakers and confectioners.

Gunter Hahn, President of BÄKO-ZENTRALE eG, described südback as “a driving force for innovative ideas, concepts and new developments.”

He highlighted that südback provides a great opportunity for specifically promoting the strengths and regional features of the bakery trade through “fresh ideas for the trend ranges of bakers and confectioners,” and added “südback focuses on industry-specific topics and provides innovative ideas from the market.”

In order to meet this requirement, Messe Stuttgart gave südback a new hall structure and an additional 10,000m2 of exhibition space. The trade fair aims to have around 700 exhibitors, who are predicted to attract around 38,000 visitors to südback.

Benefit visitor flow

Kromer explained that the change to opposite halls on the trade fair grounds should also benefit the visitor flow.

“The trade fair can now be accessed from two entrances,” he said. “When planning the six trade fair halls, care is taken to ensure there is a good mix in the exhibition areas.”

Trade visitors will now find in every hall at least one key player from the important industries. Every hall therefore now contains a compact overview of important trends and the latest topics on the baking market. The new structure also offers exhibitors advantages because it prevents monothematic restriction to one trade fair highlight.

Plan more time to attend

The enlarged exhibition area will remove the waiting list for exhibitors this year. The companies will therefore have more space for their presentation while several new exhibitors could also be considered. However, the expansion of the trade fair also means that trade visitors should plan more time to attend.

New tips and tricks are shown in live demonstrations not only by the trade associations, but also by many exhibitors. Entertaining demonstrations, the presentation of new techniques and ideas, trends and recipes are important programme components in both the Bakers' Trend Forum and the Confectioners' Trend Forum.

As a südback partner, BÄKO-ZENTRALE eG presents their current sales concepts and product lines in the Paul Horn Hall (Hall 10). BÄKO regional cooperatives from the entire German-speaking world are available on site as a point of contact for trade fair visitors.

High added value

The BÄKO ideas bakery showcases a wide range of baking and snack ingredients with high added value and strong unique selling points for bakeries. The BÄKO snack express, which has been on the go for almost 20 years, has new recipes and presentation options for a professional breakfast offer and creative rolls and sandwiches.

Considering the extensive preparations of the exhibitors and the südback trade partners and BÄKO, Ulrich Kromer von Baerle seems optimistic about the success of südback in the international press conference, referring to the topic of "organic products" as another trade fair highlight. Snack, eating out and breakfast concepts are also very popular. They are marked separately both online and in the trade fair catalogue.
Start-ups also showcase themselves at the joint stand of the Federal Ministry of Economics and Technology (BMWi).

The Trend Awards

The Trend Award has been an integral part of südback since 2002; it is an important accolade for product developers, innovative inventors and creative talents in the industry.

The winners of this year’s contest have been decided by a first-class jury. In the competition for the renowned industry award for the bakery and confectionery trades, four companies dominated from the more than 60 top-class entries that were received.

In the Marketing, Sales and Organisation Category the südback Trend Award goes to Renosan Chemie & Technik GmbH. The developed Renocheck hygiene app and the e-learning portal help food companies to implement and comply with hygiene standards. The Cloud-based application was developed specifically for bakeries and cake shops, and facilitates the digital transformation of analogue processes. Many tasks and structures such as hygiene management, cleaning plans, hygiene training courses, certificates, etc. can be easily implemented and controlled online in a cost-effective way.

Extraordinary plasticity

Corman SA wins the südback Trend Award in the Raw Materials & Convenience Category for the world's first puff pastry butter block 'Beurre Noisette.’ The Belgian butter specialist promises easy processing and simple dough folding through extraordinary plasticity, constant quality and an identical taste throughout the year. 

The winner of the südback Trend Award this year in the Technology Category is Atmos Anlagenbau GmbH. Artisan 4.0, a specific air-conditioning system controlled by sensors, regulates and optimises the ambient climatic conditions on a product-oriented basis during production in bakeries and a large number of food companies. The temperature, humidity, pressure, mass or flows can be controlled and observed in a targeted manner before and after baking.

The innovative aspects are data-dependently regulated and process-optimised infeed of fresh air and aerosols, and the non-use of chemical additives. Much better hygiene and work conditions are also attained through the processes.

Individual taste experiences

The Special Prize this year goes to Konzeptwerkstatt Merge GmbH & Co. KG for its premium bread concept. The concept "My Bread. Your Bread" was formulated in cooperation with the Hellmich company and satisfies customers' needs for individual taste experiences: users can create their own bread using selected premium ingredients. 

State-of-the-art technology (e.g. "TEIGHUMIDOR®") systematises the process at the point of sale in order to allow effective sales transactions. 

The products entered in the competition for the südback Trend Award may not have been on the market for more than one year or developed at least up to full market maturity. In addition to criteria such as functionality, design and operational safety, the jury's decision was based on other factors such as economic efficiency and environmental compatibility. All the winning products can be seen at the trade fair. 

The Awards will be presented during the official opening of the trade fair in the Bakers' Trend Forum in the Alfred Kärcher Hall (Hall 8) at 9.30am on the Saturday. The Award is presented by Messe Stuttgart in cooperation with its partners; Allgemeine BäckerZeitung (ABZ) and BÄKO-magazin. The co-organisers are the BÄKO Head Office and the Württemberg Regional Association of Bakers' Guilds.
